Sweet Potato Boats (of goodness!)

Ingredients:
1 Sweet Potato or Yam
4-5 oz Shredded chicken
1-2 Tbl. Chopped Peppers (your favorite kind)
1-2 Tbl Chopped Onion (red or white)
1/4 Cup Corn
1 Dash Salt and Pepper
1/4 Tsp Cumin
1/4 Tsp Chili Powder
1 Clove Fresh Garlic minced or chopped
Shredded parmesean cheese
Your Favorite Salsa
Fat Free Greek Yogurt (plain no flavor not even vanilla!)
Step 1 - Cook the Sweet Potato
You can do this in the oven but that takes way to look. My trick, the microwave! Wash the outside and then puncture a bunch of holes in the potato with a fork. Place it in the center of the microwave and cook for 4-5 minutes, until it is soft.
Step 2 - Cut the potato in half and cut out the center. once out shopped in the bite sized pieces. I cut it into little cubes but you can leave some of the potato in the skin on the side.
Step 3 - In a pan on the stove, heat up the garlic with the peppers and onions. Add the chicken, corn, spices, and chopped up potato. Cook together. I normally cook it until the veggies are all cooked. In the meantime, turn on your oven's broiler.
Step 4 - Stuff that yummy mixture you made in the pan into the potato skins and place on a cookie sheet. Sprinkle the cheese on top and place in the oven for 4-5 minutes until the cheese in melted and has that nice golden hint to it.
Step 5 - Pull out of the oven let it cool down a bit and serve with Salsa, a dolup of greek yogurt (like sour creme), and chives if you want to add them to it.
